New Years Eve Prep

I've ebeen busy today,
preparing for tonight.
A gathering of friends
and family
and people icare for and love.
Some won't be there,
but that okay,
i'll carrry them in my heart.
But they won't taste what i prepared:

For those interested - the brisket is a 24 hour slow cooked - with my own "rub". The rub has some heat from dried chilpote peppers, salt, paprika, black pepper and a bit of sugar. I smoke using 3 hard woods - Cherry, Maple and Hazelnut (since i don't have Hickory. The brisket is smoked at less than 225 for 6 hourse, then becausei have a hardtime keeping the fire going over night, I bring the brisket indoors, place it is a baking pan with apple juice and beer and cook for the additional 18 hours covered.
